To step things up a notch, we hooked up with Ernie, who makes the finest rum we've ever tasted at nearby Swamp Fox Distilling in Pendleton (seriously, go try their Dead Center XO rum...).     11.0% ABV Pastry Stout We collaborated with Magnify Brewing to use as much Emperor's biodynamic coconut and marshmallow as possible in our collaboration to help our sleep-wake cycles. After boiling up a massive base, we used a 50/50 Blend of Toasted and Raw Biodynamic coconut before a big dose of marshmallows. The result is a big, dessert-style Imperial Stout that is as bougie and decadent as a New Jersey beer Emperor. Emperor’s Marshmelatonin pours a viscous jet black with a creamy head.     7.0% ABV Sour Cherry Lambic “This is the masterpiece of which I am most proud, as is one of my sons after whom it is named. What makes this traditional kriek special is that it is brewed with whole cherries. Since real Schaerbeek cherries are scarce, Lindemans Brewery has found their perfect equivalence elsewhere in Europe. It is deep red in colour and its foam head is slightly pink. Very refreshing, this beverage is a perfect thirst-quencher which, thanks to its fizzy and tangy flavour, is ideal as an aperitif.” In order to produce the Oude Kriek Cuvée René, the cherries ferment in lambic that is at least six months old in huge 10,000-litre oak barrels called foudres. After six months, this traditional kriek is bottled in corked 75 cl bottles. The beer will then undergo a spontaneous second fermentation process which, after a few months, will produce the carbon dioxide (CO2) to which this authentic beer owes its carbonation and distinctive foam head.

The weighted average age of this fruit blend is almost 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim.     8.1% ABV For this Druif, we macerated Riesling grapes from Harth & Harth, Rheinhessen, Germany. Maceration took five months and we used two- and three-year old lambikken only. Afterwards, we blended with three-year old lambikken and very young lambikken for balance and bottle fermentation. In total, we used lambikken originating from four different barrels and ten different brews. The weighted average age of the blend is almost 22 months. The final fruit intensity is 500 grams of Riesling grapes per litre of finished Druif. 100% 3 Fonteinen brewed lambik.

We used strawberries from Ferme Framboos that were hand-picked in the summer of 2020. We used a single jonge lambik, and we did not blend with any other lambik afterwards. The final fruit intensity amounts up to 623 grams of strawberries per litre of Aardbei.

    6.0% ABV Saison blended with Cantillon Lambic, refermented in the bottle. An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character. The finish is bitter but perfectly in balance.
